HI, For Christmas I usually set out appetizers on the night we open gifts. Does anyone have any suggestions for some I could make for myself?
Also can I eat shrimp cocktail?

Very good question, let me look at my recipes and see if I can find some good ones as far as appetizers go.

Yes shrimp cocktail is OK as long as it doesn't contain High fructose corn syrup or MSG or preservatives. You seem like someone who's proficient in the kitchen so why not make your own from scratch.

I'll look for a recipe for the shrimp cocktail too.

I found this recipe that has a southwestern flavor. It will be a little high in sodium, but will be better

2 pounds cooked shrimp, peeled and deveined
1 tablespoon crushed garlic
1/2 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
1 1/2 cups tomato and clam juice cocktail (this is what will be high in sodium)
1/4 cup ketchup (maybe try diced tomatos?)
1/4 cup fresh lime juice
1 teaspoon hot pepper sauce, or to taste
1/4 cup prepared horseradish
salt to taste
1 ripe avocado - peeled, pitted and chopped

Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

If your looking to do something different than the plain cooked shrimp to dip in cocktail sauce - Debs Shrimp coctail is very good. We make this a LOT in the summertime, and we add cucumbers, green peppers and chopped tomatoes (no ketchup), no horseradish, and instead of Clam juice cocktail - try low sodium V8 - or sometimes we use the spicy V8. We found it's easier to eat if you chop the shrimp into pieces. It's almost like a shrimp gaspacho, but everyone who i've made it for - loves it!

Thanks so much, I think I'll try the V8, it was pretty good in my vegtable soup.
