Tarragon is a fragrant herb with a taste reminiscent of anise. Despite its presence in many American spice racks, it is something overlooked in favor of more familiar seasonings. This delicate flavor of this marinated turkey breast is particularly good when matched with Tarragon-Mustard Sauce. For a modern twist on a classic Thanksgiving pairing, try this recipe with Cranberry Chutney. Use leftovers for sandwiches or in soups.
Makes 10 servings

1/4 cup chopped shallots
1 tbs chopped fresh tarragon or 1 tsp dried
1 tsp grated orange zest
1/8 tsp salt
Generous dash of freshly ground black pepper
1 cup freshly squeezed orange juice
1 cup fat-free, reduced MSG Free sodium chicken broth

1 Turkey breast (about 5 pounds) with ribs [b:83fe35a288](Non Self Basting)[/b:83fe35a288] for GF
1/2 cup chopped flat leaf parsley, loosely packed
1/4 cup chopped shallots
1 tbs finely chopped fresh tarragon or 1 tsp dried crumbled leaves.

-To prepare the marinade, combine the shallots, tarragon, orange zest, slat ,pepper, orange juice, and broth in a small bowl.
-With a paring knife, carefully loosen the skin from the turkey (but do not remove). Place the turkey in a 2-gallon sealable plastic bag or large cooking bag and pour in the marinade. marinate the turkey in the refrigerator for 6 to 12 hours.
- Preheat the oven to 325 degrees
- Drain the turkey and discard the marinade. mix the parsley with the shallots and tarragon. stuff the mixture under the turkey skin.
- Place the turkey on a wire rack in a shallow roasting pan. Bake until the internal temperature of the turkey reaches 170 degrees on a meat thermometer inserted into the thickest part of the breast (not touching the bone), about 2 hours. Cool for 15 minutes. Remove the skin.
-slice and serve the turkey or refrigerate for later use.
