Kasha is the Russian name for savory or sweet dishes of boiled baked or roasted buckwheat groats or whole-grain buckwheat. This is a gluten free recipe.

28 oz can tomatoes
1 tsp extra virgin olive oil
3 cups diced cabbage
1 stock chopped celery
1 cup chopped carrots
2 leeks, thinly sliced
1/3 cup dried peas or small white beans
1/2 cup coarse kasha
5 cups vegetable broth
1/2 cup brown rice
1 tsp salt
1/2 tsp cayenne pepper or Tabasco sauce
1 tsp dried sweet basil or 1 Tbs. chopped fresh


1) combine the tomatoes, olive oil, cabbage, carrots leeks, peas, kasha and vegetable broth in a crock-pot or large Dutch oven.

2) Simmer, covered for an hour. Add the brown rice, salt , cayenne and basil. Add more liquid if needed.

3) cook for an additional 20-30 minutes. Add the parsley just prior to serving if desired.

Makes 6 servings
