So I"m in one of my most intense craving days, and decided to use up some of the apples that are going bad too quickly.

5-6 medium apples, diced (I used golden delicious)
Few Tablespoons lemon juice
1 1/2 teaspoons apple pie spice (can use combination of cinnamon & nutmeg if you don't have apple pie spice)
2 Tablespoons Splenda
1/2 cup GF flour
1/2 cup brown sugar
1/4 cup Smart Balance 'butter'
crushed pecans (I just threw in what I had)

In a baking pan (I used a 9" square), combine the apples, lemon juice, splenda and spices. In a bowl, combine the flour, brown sugar, smart balance and pecans. Crumble over the apples and bake at 400 for about 20 minutes.
YUM-MO!!!

Thank you so much for sharing this fabulous recipe! Did you use rice flour or some other blend? Just wondering.

I use my favorite all-purpose GF flour blend, it's Bob's Red Mill GF All-Purpose Baking Flour. I find it at Kroger in the health food section. I love it! It includes bean and tapioca flours, among others. I use it for everything and anything that calls for flour. No one even notices the difference.

You could make a gf pie crust with Chebe or make a apple cobbler with this recipe with Chebe crust baked on top...;)
