You can make this soup in about 20 minutes but if you let it simmer for 45 the potatoes will soften up and thicken the soup. This recipe is GF/DF and vegetarian if you use vegetable broth instead of chicken broth. I had a little chicken breast left over from dinner and added it for a little more protein. You can also crush up a few blue corn chips and add for a yummy tortilla soup.

Grandma's Potato-Tomato Soup
  • 1 Tbs Olive oil
  • 3 cloves fresh garlic, pressed or minced
  • 2 med-large size potatoes (russet or Yukon gold) chopped 1" cubes
  • 1/2 cup chopped onion (yellow or sweet Vidalia)
  • 1 cup canned whole or diced tomato (or diced tomatoes with green chilies for spicy kick)
  • 2 tsp cumin
  • 4-5 cups chicken broth (I used Better Than Bouillon) it's GF and MSG free
  • 1/2 tsp cilantro
  • salt and pepper to taste
  • Add cooked shredded chicken breast (optional)
Heat olive oil in large pot, add garlic, chopped onion and chopped potatoes. Saute potato mixture for about 10 minutes to caramelize onion. Add chicken or vegetable broth, cumin, cilantro and simmer for 20 minutes or until potatoes are cooked.

What's on the menu today...yes Grandma's potato-tomato soup GF/DF

I'm adding a bit of left-over quinoa to it instead of chicken. Quinoa is a complete protein GF seed and a fairly good source of iron, riboflavin, calcium, magnesium, manganese, copper and zinc.
