Mango Turkey Picadillo Wraps (adjusted for GF)
Serves: 8
Serving Size: 1 tortilla and approx 3 oz turkey mixture

The sweet yet tart flavor of mango acts as a wonderful complement to turkey.

INGREDIENTS
2 tbsp Smart Balance buttery spread or Olive Oil
1 Pound cooked turkey breast, chopped (non-based turkey for GF)
1 Small yellow bell pepper, seeded & chopped fine
1/2 Cup chopped sweet onion
2 Chipotle chilies in adobo sauce, drained and chopped (Avoid adobo sauce if GF)
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp coriander or 1-3 Tbsp fresh chopped cilantro
1 tsp dried oregano
1 Cup thick salsa .
2 Cups chopped mango (in season right now)
GF tortillas - Use brown rice or corn tortillas for gluten free.

DIRECTIONS
1. Over medium heat place organic Smart Balance spread in a large skillet. Stir in cooked turkey, bell pepper, onion, chilies, herbs and spices - mixing well. Saute for about 2 minutes or until vegetables are crispy and turkey is hot.

2. Reduce heat to low and gently stir in salsa, and mango, blending well. Cook and stir about 3 to 4 minutes or until mixture in hot throughout.

3. Heat tortillas as directed on the package.

4. Spoon turkey mixture down the center of each warmed tortilla. Fold up the bottom end, and then fold in the sides. Serve immediately.
