This recipe revision was tested by Traci with rave reviews from her family. The Canadian Bacon is uncured to avoid added nitrites and preservatives. If you can't find the Andouille sausages by AmyLu you can check their link here to order . Costco carries it as well as major grocery store chains.

Healthier Jambalaya


4 slices of uncured Canadian Bacon (Jones Farms)
4 links sliced Andouille style chicken sausage (Sausages by AmyLu- Andouille is a good one for this recipe and is GF)
1 Tbs extra virgin olive oil
1 large onion, finely chopped
1 1/2 cups uncooked long grain white and/or brown rice (try half and half)
4-5 cups MSG free Chicken Broth—add more if you want it soupier
1 (14.5 ounce) can diced tomatoes with juice
2 teaspoons fresh lemon juice
1 1/2 teaspoons GF Worcestershire sauce
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
1/2 pound medium shrimp - peeled and de-veined (optional)
1/4 cup chopped fresh parsley
1 chopped bell pepper

Also optional, 1 tsp Tabasco for a little more heat

Place sliced chicken sausage in a large, heavy pot over medium-high heat, and heat until semi brown. Remove, and set aside. You can do this in the Dutch oven if you want.
Sauté onion in olive oil in a large Dutch, cook 5 minutes over medium heat, stirring constantly until tender. Mix in the rice, 2 1/4 cups broth, tomatoes with juice, lemon juice, and Worcestershire sauce. Add salt, nutmeg, cayenne pepper, and black pepper. Bring to a boil, reduce heat to low, cover, and simmer 30 minutes.
Stir in sliced/chopped uncured Canadian Bacon, shrimp, bell pepper into the pot. Continue cooking 10 minutes, uncovered, over low heat. Sprinkle with parsley and serve.
Makes 8 -1 cup servings

Left overs are very good too. The rice really fluffs up nice. I added a little more chicken broth.
