Tortilla Soup
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 (28 ounce) can crushed tomatoes
  • 3 (10.5 ounce) can condensed chicken broth
  • 1 1/4 cups water
  • 1 cup whole corn kernels, cooked - used frozen
  • 1 cup white hominy (skipped, didn't have)
  • 1 cup black beans
  • 1 (4 ounce) can chopped green chili peppers - didn't have this so I added 2 Tbls Pace Salsa
  • 1/4 cup chopped fresh cilantro
  • 2 boneless chicken breast halves, cooked and cut/shredded into bite-sized pieces
  • crushed tortilla chips (just a few)
  • sliced avocado
  • shredded low fat Monterey Jack cheese
  • chopped green onions or cilantro

  1. In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, cumin, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
  2. Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
  3. Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

This recipe was so easy to make, I let it simmer for over an hour before I added the fresh cilantro. I didn't put any cheese into my bowl but my family loved the cheese and a dab of sour cream.

This was better than any I've ever ordered at any Mexican resturant we've been to. This is going into high rotation for my family too this winter. Next time I might even put in a few bell peppers. :D

I made the tortilla soup the other day, and it was fabulous! The only thing I did was add some black beans to it. I'm such a bean lover. (Too bad for my family.:D) In fact, my husband loved it so much that he finished off all the leftovers that night. Which really made me mad because I wanted to have it for lunch. Phooey on him.

Crystal,

Adding black beans is a great idea. Next time you make it take half of it out immediately and put in individual size Tupperware or freezer containers and freeze it. Then you'll have a few servings ready when you want it. Funny, this same thing happened at my house, but I'd rather my husband eat this than a hamburger. :D

Thanks for the tip! I'm making minestrone tonight and it's a huge batch, so I'm going to freeze lots of leftovers.

Yesterday I made this soup at home. I am on diet to lose weight. It did not felt hungry or starving and slept happily.
Thanks for your post really helpful for weight loser like me.
