I found this on Allrecipes, but changed it a bit and made it my own. This was one of those recipes that I thought sounded okay, and made it and it was more than just okay. It was really good!

To make it vegetarian, omit the chicken and use two cans of garbanzo beans.

Moroccan Tagine

1/2 T. olive oil

3 boneless, skinless chicken breast halves, cut in chunks

1 onion, chopped

3 cloves garlic, minced

1 1-inch-square hunk of ginger root, minced

2 medium sweet potatoes, peeled and diced

1 (15 oz.) can garbanzo beans, drained and rinsed

1 carrot, peeled and chopped

1 (14.5 oz.) can diced tomatoes with juice

1 (14 oz.) can vegetable or chicken broth

1 T. sugar (I used Splenda)

1 T. fresh lemon juice and zest of 1 lemon

1 t. salt

1 t. ground coriander

1 dash cayenne pepper

 

Heat the olive oil in a large skillet over medium heat, and cook the chicken, onion, garlic and ginger for about 15 minutes, until browned.

Add remaining ingredients to the skillet, stirring well. Bring to a boil, and continue cooking 30 minutes until the vegetables are tender.

Serve with couscous or rice. I garnished the tagine with cilantro, too.

Ooh Cyrstal, this is an excellent recipe! Thank you for sharing it.

Note to those on the gluten-free diet, it's also gluten-free as is, except for the couscous so stay with rice or another GF grain but it has enough carbohydrate with the beans and sweet potato alone. :)
