One butternut squash

One large onion (sweet or regular)

2 garlic cloves

Oil of choice---something for high heat...safflower, grapeseed, etc

sea salt

rosemary

nutmeg


Peel and chop the squash.  This is the hardest part!  Chop into good sized chunks.   Chop the onion very coarsely.  Mix squash chunks and onion and garlic in bowl.  Drizzle oil to coat.  Add sea salt and rosemary to taste --- I like a lot of rosemary on this!  Just add a pinch of nutmeg.  Spread on large baking sheet and bake at 450 for about 30-40 min.  It depends on how well you want your squash cooked.  I like it when it even gets a little blackened....some people dont like it that way though.  This is such a great dish!  I need to make it this week!
