This is the most bizaare recipe I've ever tried...youll understand with a glance at the ingredients. But, it is truly GRAIN-FREE and has a bready light texture...great just out of the oven and works well if you slice and freeze, then toast at a later time to enjoy!

3 eggs, separated
pinch salt
1 cup almond butter
1 whole egg
1 tsp. baking soda
Preheat oven to 325 degrees.
Line an 8x4 inch loaf pan with parchment
Beat the three egg WHITES with a pinch of salt until stiff, but not dry
In large mixing bowl, combine almond butter, 3 egg yolks, 1 whole egg, and baking soda---beat with mixer (will be stiff)
Fold 1/3 of egg white mixture into batter
Gently fold remaining egg whites in 2 batches---trying not to overly deflate the egg whites
Pour into prepared pan and bake for 30-40 min!
Let cool awhile before removing from the pan.
If anyone else tries this you'll have to let me know what you think. It will probably become my "unbread" staple!

Thank you for posting this interesting recipe. It's reminiscent of a macaroon cookie without the sugar. :D

my kids actually like it too..toasted with peanut butter. But I guess I'm kind of a strange mom cause they dont get alot of "normal" kid food anyway!
