This recipe can be modified in many ways and always shocks those when
told they just ate a bean pie. They come out very moist and dense.

As it appears in Environmental Nutrition:

Lemony Flourless Torte
2 cups drained/rinsed garbanzo bean (= about 1 can)
4 eggs
1.5 cups sugar (I have used as little as 1/2 cup w/ good results)
1/2 teaspoon baking powder
1 teaspoon vanilla
2 teaspoons lemon zest

Preheat oven to 350 degrees.

Place above ingredients in food
processor and blend. Coat bottom of a 9 in cake pan with oil/spray.
Bake on center rack for 45 min or until knife inserted in center
comes out clean. (my oven requires less than this amount of time)

Alternative combos: I have used black beans and cocoa powder instead
of lemon (sometimes throw in choc chips) for a chocolate bean pie,
also have used great northern beans and cinnamon/nutmeg which got
rave reviews. I also usually add in 1/2 to 1 cup of walnuts or
almonds for extra protein/texture if I am making it more as a
breakfast bar. They chop up fine when pureed w/ other ingredients. I
am sure most any canned/drained bean would work fine. It seems the
egg plays the most important role in this recipe.
