Breakfast Bars 
 
Grease 9x13 pan
oven temp 325
 
Mix dry ingredients:
 
4 C GF oats
1/2 C chopped walnuts (optional)
1 T baking powder
1/2 tsp. salt
1 T cinnamon
 
Whisk wet ingredients:
 
2 eggs
1 C pumpkin
1 C milk (or milk substitute, I use ricemilk)
1 T maple syrup
3/4 C brown sugar  (original calls for more sugar but I think this is great as is!)
1 T vanilla
 
Add wet to dry.  Pour in pan.  Bake 20-25 min at 325. 
 
** you can also add 1/2 c raisins and/or 1/2 c choc. chips (although choc isnt in the cyclediet!)

Just a note...I only used 1/2 c. brown sugar and thought they were plenty sweet enough....but I've been off of sugar for awhile so anything is probably sweet to me! :) Original recipe calls for 1/2 c brown sugar and 1 c. white sugar.

I just bought a can of pumpkin today in order to try this recipe, so thanks for the update. I also have a couple bottles of agave that I might add to see how it tastes and then just keep the sugar as is or possibly cut it a bit more.

I do have a question....normally a capital T is known as a tablespoon and a small t is known as a teaspoon....I just want to clarify that you're doing a tablespoon of cinnamon and a tablespoon of vanilla?

yes...Tablespoon of both!  THese are kind of cake-like in consistency...but hold together better than cake

Yeah, I think you might need a bit more sugar.....I used 3/4 cup brown sugar and 2 Tablespoons of amber agave but still I think it would be better with a little more sweetness.  

If you're avoiding sugar than leave it as is. :)

I'm also thinking about possibly toasting a few cut up bars to make them crunchy. I'll let you know how that turns out.
