I made this soup today for lunch, it's so easy and very good.

Tuscan Bean Soup
  • 32-48oz organic chicken stock
  • 16oz vegetable stock (optional)
  • 2 (15oz)cans Cannellini, Navy Bean or White Kidney beans
  • 1 can organic diced tomatoes
  • 1 tsp olive oil
  • 1 large onion, chopped
  • 10 baby carrots or 3 reg carrots chopped
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary or 1 fresh sprig
  • 1 tsp black pepper
  • 2 oz Canadian bacon (optional)
  • add a handful of spinach or kale at the end.
You can do this in a crock pot using 1 16oz dried Great Northern beans, sorted and rinsed on low for 8 hours. Or you can cook in a dutch oven.

In a dutch oven/pot cook onion, garlic and chopped carrots in olive oil until onion is translucent. Add chicken broth, vegetable stock, diced tomatoes, rosemary, pepper and cook until carrots are semi tender. Add canned beans and chopped Canadian bacon for flavor. Simmer for 20-30 minutes. Add a handful of spinach or kale at the end to wilt but don't over cook it. The longer it simmers the more flavorful.

Makes 8-10 servings

Sprinkle with an aged Parmesan (skip if avoiding dairy or try Dayia cheese)
