Eat your vegetables at breakfast!
Use fresh or frozen vegetables, just use whatever you have on hand. Here's what I used in the above photo:
1/2 Chopped/sliced zucchini (med)
1/2 Summer squash chopped (med)
1/2 Tomato or 5-6 cherry tomatoes
1-3 Tablespoon chopped onion
1 Handful or 1 cup fresh spinach or mixed greens.
2 Tablespoons of chopped red or green bell pepper
1 tsp olive oil
1-2 whole organic eggs
If you use frozen vegetables, I like the mixed stir-fry that includes broccoli, carrots, mushrooms, onions and green beans. But, it doesn't matter, just use what you'll eat. Use 1 cup per serving.
Heat olive oil in a skillet pan, saute the zucchini, summer squash, and onion until tender. add spinach to wilt and stir in eggs. Cook until eggs are firm.
